The flash of light you saw in the sky was not a UFO. Swamp gas from a weather balloon was trapped in a thermal pocket and reflected the light from Venus.

In an era where people ate calves' brains in aspic, liver loaf was fucking GREAT!!!

Image

I would eat liver loaf three times a day rather than touch this shit.

That green blob in the middle, of course. (And "proteins", ha ha! As the saying goes, "charcuterie" is the art of eating grease and water with a fork… )

My mother would buy pimiento loaf and olive loaf for our school lunches. I liked it on white bread with mustard. And liverwurst too. Hard to find head cheese or lunch tongue around here anymore.

You think we have kosher delis in New Hampshire? I'm sure it can be found in the Boston area.

Half agree, but there's too much gelatin for my taste. The French version, the "jambon persillé", is OK (very tasty, actually):

Image

There is an analogous Italian preparation, but I have forgotten its name. Anyway, most of the time I favor crunchy over wobbly…

That's for aspic made at home, or by a pork butcher or a restaurant I can trust (hopefully…). The industrial stuff is dubious, to say the least:
Wikipedia wrote:The worldwide production amount of gelatin is about 375,000–400,000 tonnes per year (830×106–880×106 lb/a). On a commercial scale, gelatin is made from by-products of the meat and leather industries. Most gelatin is derived from pork skins, pork, and cattle bones, or split cattle hides. Fish by-products may also be used because they eliminate some of the religious obstacles surrounding gelatin consumption.
And ends up in a lot of industrial foods, including sweets.

Bon appétit!

Dad used to get what he called "souse."

Plus "blood tongue."

Souse is just another name for head cheese. Blood tongue is head cheese made with pig blood and beef tongue, kind of like a blood sausage.

Yup. Heaven help you if you ate any of Dad's souse.
