Jeff Bezos walks into a 7-11 and buys a $1 pack of gum. He hands the Clerk a$100 dollar bill.

How fast does the clerk have to be in giving him his change to make it worth Jeff's time to wait?

About 1/17th of a second. Which, coincidentally, is how long it should take for a clerk to realize that Jeff Bezos wouldn't have cash on him in the first place.

The question presumes he has a choice of either getting his change OR making a a profit off of his holdings during the time it takes for the cashier to ring him up.
